Blueberry French Toast Fit for a QueenThe best part about this recipe is that you do all the prep work (which is maybe 5 minutes) the night before. Then the next day, you get up, pop this in the oven, set a timer and crawl back to bed! Lightly grease a baking dish. Arrange 6 slices of bread (cubed) in the dish, and top with 8oz cream cheese. Sprinkle 1 cup blueberries over the cream cheese, and top with another 6 slices of bread.
In a large bowl, mix 12 eggs, 2 cups milk, 1 tsp vanilla extract, and 1/2 cup maple syrup. Pour over the bread cubes. Cover, and refrigerate overnight. In the morning, preheat the oven to 175 degrees celcius. Cover, and bake 30 minutes. Uncover, and continue baking 25 to 30 minutes, until center is firm and surface is lightly browned. Then, mix 1 cup white sugar, 1 cup water and 2 tbsp cornstarch. Stirring constantly, cook for 3 minutes. Mix in 1 more cup blueberries. Stir in 1 tbsp butter, and pour over the baked French toast.
