Make Your Own: Fresh Seafood Laksa
Inspired by one of the greatest of all south-east Asian noodle dishes, this fresh king prawn and hake laksa bowl really hits the spot!
400g fresh hake fillets 2 tbsp chii oil 2 cloves garlic, chopped finely 1 tbsp grated fresh ginger 3 tbsp laksa paste 1 litre of premium fish stock 1 tbsp brown sugar 250ml coconut cream 1 tbsp fish sauce 2 cups pumpkin cubes 1/2 broccoli, diced 150g fresh king prawns 250g noodles, cooked Coriander to serve
Place the oil into a large pot and warm. Add the garlic and ginger and cook for 2 minutes. Stir through the laska paste.Add the stock, sugar, and fish sauce. Bring to a simmer then add the pumpkin and cook for around 10 minutes to soften. Just before serving add the broccoli, king prawns and hake. Cook gently so the fish doesn’t break into pieces. Place the cooked noodles into your serving bowls. Ladle over the laksa vegetables and place a piece of fish on top. Garnish generously with coriander.
